A ticket time on a preparation station is the time that passed from when the KOT appeared on the station (or an item in the KOT) until it was bumped.
The KOT or KOT lines appear on a station when they are sent to the KDS, unless;
- all items in the KOT should be ready at the same time causing a delay in appearance for the items with less production time.
- the whole KOT may be held for some minutes.
The ticket time is compared to the estimated ticket time for each item which is the item's production time.
